Apicius offers a full-time master level program in International Baking and Pastry for professional pastry chefs or hospitality graduates who wish to enhance specific skills in pastry arts in an international environment. The Fall semester program is designed to celebrate the outstanding mastery of Baking and Pastry that has evolved in Italy over centuries. Students gain in-depth knowledge of worldwide desserts, wedding and celebration cakes, Italian gelato, artistic chocolate, and much more, while mastering product knowledge, interpretation and innovation, historical context, and dish balance. After successful completion of the program, students receive a Master Certificate in Italian Baking and Pastry.

Subject Experience: Students must demonstrate intermediate level knowledge of baking and pastry.
English Language: Non-native English language speakers must submit TOEFL: 500+ (paper-based), IELTS: 5+, OOPT: 50+, or equivalent.
Academic Year: High school graduate or above
Program Details
The program provides students with a sound understanding of the contemporary methods and styles in Italy and Europe. It polishes each student’s skills and techniques enabling them to move forward in his or her professional career. To attain the specified objectives, students complete the following 5 courses for a total of almost 250 hours including instruction and lab hours:
Practicum experience (approx. 250 hours), putting theory to practice in a professional environment. The practicum takes place at FEDORA, the Apicius non-profit cultural association and Pastry-club where students actually operate the pastry shop from production to customer service.
After successful completion of the program, students receive a Master Certificate in Italian Baking and Pastry.
Requirements
Students must submit a detailed CV demonstrating a Bachelor’s degree in pastry arts and/or hospitality with evaluation reports or transcripts or at least 3 years of professional experience. Students must demonstrate intermediate level knowledge of: chocolate preparations (ganache, pralines), breads and yeasts, plating skills, dessert styling basic skills, all the main baking dough and methods (choux, puff pastry, short pastry etc.). Students complete a written exam and a practical test at the start of the term to confirm the required experience.

Pre-departure and Re-entry services
Housing is not included in SAI Select Services programs. However, your SAI Admissions Counselor will be happy to provide you with information and recommendations for housing agencies, dormitories, and rentals in Florence. Students who do not have prior housing arrangements should begin speaking with their Admissions Counselor as soon as possible.
Passports
Passports should be valid for 3 months after planned departure from Italy.
Student Visas
In accordance with Italian law students studying in Italy for 90 days or more are required to obtain a student visa. Those with Italian/EU citizenship are exempted. Non-US nationals should consult their local Consulate for details on student visa requirements.
Students must appear in person at the Italian Consulate to present their student visa application. Our Student Visa Office is available to assist students in getting ready for the appointment; SAI provides student visa consulting for all our students at no cost.
