Apicius offers a full-time Master in Italian Cuisine program for professional chefs or hospitality graduates who wish to enhance specific skills in culinary arts. The program is one year long (fall and spring semester) and is aimed at celebrating the outstanding mastery of cuisine that has evolved in Italy over the centuries as well as providing students with a sound understanding of the gastronomic culture of Italy. Students gain knowledge of quality products and the historical background of dishes, and the ability to interpret recipes and pair ingredients to create a balanced dish. After successful completion of the program, students receive a Master Certificate in Italian Cuisine.

Subject Experience: Students should have a bachelor’s degree in culinary arts and/or hospitality, or 3+ years work experience in field.
English Language: Non-native English language speakers must submit TOEFL: 500+ (paper-based), IELTS: 5+, OOPT: 50+, or equivalent.
Academic Year: High school graduate or above.
The program provides students with a sound understanding of the gastronomic culture in Italy. It polishes each student’s skills and techniques enabling them to move forward in his or her professional career. To attain the specified objectives, the curriculum includes:
Students must submit a detailed CV demonstrating a Bachelor’s degree in culinary arts and/or hospitality with evaluation reports or transcripts or at least 3 years of professional experience. Students must demonstrate knowledge of: boning chicken, filleting fish, various cooking methodologies (poaching, roasting, braising, stewing, sautéing, broiling, frying, etc.), knife skills for various vegetable cuts, basic dressings, marinades, and sauces. Students complete a written exam and a practical test at the start of the term to confirm the required experience. Apicius Culinary Arts Advanced students needing the aforementioned technical skills may apply for summer sessions before applying for the Master Program.

Pre-departure and Re-entry services
Housing is not included in SAI Select Services programs. However, your SAI Admissions Counselor will be happy to provide you with information and recommendations for housing agencies, dormitories, and rentals in Florence. Students who do not have prior housing arrangements should begin speaking with their Admissions Counselor as soon as possible.
Passports should be valid for 3 months after planned departure from Italy.
In accordance with Italian law students studying in Italy for 90 days or more are required to obtain a student visa. Those with Italian/EU citizenship are exempted. Non-US nationals should consult their local Consulate for details on student visa requirements.
Students must appear in person at the Italian Consulate to present their student visa application. Our Student Visa Office is available to assist students in getting ready for the appointment; SAI provides student visa consulting for all our students at no cost.
